Ingredients

  • 6 flour tortillas see note 1
  • 1 tablespoon olive oil
  • 1/2 large onion diced
  • 1 red bell pepper diced
  • 1/4 cup chicken stock or broth or water
  • 1 (1-ounce) packet taco seasoning see note 2
  • 2 tablespoons tomato paste
  • 1 pound ground beef lean, 93/7
  • 1-1/2 teaspoons minced garlic
  • 1 cup frozen corn
  • 1/2 cup finely chopped cilantro
  • 3 cups sharp Cheddar cheese or Monterey Jack, combo of both is my fave—see note 3

Instructions 

  • Prepare Tortillas & Ingredients: If using uncooked tortillas (like TortillaLand®), warm them in a skillet according to package directions until fully cooked, then set aside. This pre-cooking step is essential regardless of whether you’ll finish the quesadillas on the stovetop or in an air fryer. If using pre-cooked tortillas, no initial preparation is needed. Dice the onion and red bell pepper. Finely chop the cilantro. Shred the cheese from a block for optimal melt.
  • Cook the Ground Beef Filling: Heat the olive oil in a large skillet over high heat. Add the diced onion and red pepper, sautéing for 3–5 minutes until they become tender and slightly golden. Push the cooked vegetables to one side of the skillet and add the ground beef to the center. Break apart the beef with a spatula, searing and crumbling it until fully browned. Drain any excess grease from the skillet. Reduce the heat to medium, then stir in the taco seasoning mix, tomato paste, chicken stock (or broth/water), and minced garlic. Cook for 1–3 minutes, stirring constantly, until the mixture is fragrant and well combined. Remove the skillet from the heat, then stir in the frozen corn and finely chopped cilantro. Mix well to ensure all ingredients are evenly distributed.
  • Assemble the Quesadillas: Lay out your 6 prepared tortillas on a clean work surface. Evenly divide the shredded cheese and the ground beef filling among them. On one half of each tortilla, sprinkle approximately 2 tablespoons of cheese as the base layer. Spoon about 1/2 cup of the seasoned ground beef mixture over the cheese. Finally, top the beef filling with another 2 tablespoons of cheese. Carefully fold the empty half of each tortilla over the filling and gently press down to seal the edges, creating a half-moon shape.
  • Skillet Method: Lightly brush both sides of each assembled quesadilla with oil or use cooking spray. Place 2 quesadillas into a dry, non-stick skillet over medium-low heat. Cover the skillet and cook for 2–3 minutes until the bottom is golden brown and crispy. Uncover, carefully flip each quesadilla, and press lightly with a spatula to help seal the edges and ensure even contact with the pan. Cook for another 2–3 minutes, or until the cheese filling is completely melted and gooey, and the tortillas are beautifully browned and crisp. Keep the heat low to allow the cheese sufficient time to melt thoroughly before the tortillas burn. Repeat this process with the remaining quesadillas. (see note 5).
  • Air Fryer Method: To prevent the tortillas from lifting during cooking, insert a few toothpicks through the edges of each quesadilla. Generously spray both sides of the quesadillas with cooking spray. Place 1-2 quesadillas in the air fryer basket, ensuring they have enough space for air circulation. Cook at 350°F (175°C) for 6–8 minutes, flipping them halfway through, until they are wonderfully crisp and golden, and the cheese is perfectly melted. Before flipping, gently press the quesadillas together to help seal the edges. Carefully remove the cooked quesadillas from the air fryer and allow them to cool for a few minutes before cutting and serving. Repeat with remaining quesadillas. (see note 5).
  • Serve & Enjoy: Once all quesadillas are cooked to perfection, cut them into wedges. Serve immediately with your favorite toppings such as guacamole, sour cream, fresh salsa, or any other desired accompaniments. Enjoy your delicious homemade ground beef quesadillas!

Note 2: Taco seasoning packets can vary significantly in terms of spice level and overall flavor. For a consistent and delicious result, I recommend McCormick® and Old El Paso® mild packets. Alternatively, for superior flavor and control, use a homemade taco seasoning blend:
