- 2-1/4 teaspoons olive oil
- 3/4 teaspoon red wine vinegar
- 1 lemon
Instructions
- Preheat oven to 400℉ (200°C). Drain and rinse chickpeas thoroughly. Dry them very well in a salad spinner or by patting vigorously with paper towels; wet chickpeas will steam instead of crisp. Generously grease a sheet pan with cooking spray.
- Add chickpeas to the prepared pan. - Meanwhile, prepare the Tzatziki sauce. Grate the English or Persian cucumber using the large holes of a cheese grater. Line a small bowl with a few layers of paper towels (or a clean kitchen towel) and place the grated cucumber on top. Squeeze out as much excess moisture as you possibly can from the cucumber to prevent the sauce from becoming watery. Once thoroughly drained, zest the lemon to get 1/4 teaspoon zest and juice it for 1-1/2 teaspoons juice. Add the drained cucumber, lemon zest, lemon juice, plain Greek yogurt, olive oil, and red wine vinegar to a medium bowl. Season to taste with salt and pepper (we suggest 1/8 teaspoon salt and a pinch of pepper). Stir until well combined. Cover the bowl and refrigerate until ready to serve to allow flavors to meld.
- To prepare the pita bread: Spray both sides of each pita with cooking spray. Using the stovetop, “grill” the bread over an open flame on medium heat until slightly charred and warmed through, approximately 10–15 seconds per side. Flip with tongs as needed. Once charred, immediately fold each pita in half and cover with a clean kitchen towel to keep warm and pliable until serving. Alternatively, if you have an electric range, warm the pitas individually in the microwave, covered with a damp paper towel, for about 10-15 seconds; this will make them soft and pliable, though not charred.
- Assemble your gyros: Spread a layer of hummus (if using) or Tzatziki sauce on one side of the warmed pita bread. Add half the roasted chickpeas, gently pressing them into the sauce to help them stay in place. Pile on your desired toppings such as thinly sliced red onions, thinly sliced cucumbers, diced cherry tomatoes, and crumbled feta cheese. Drizzle generously with more Tzatziki sauce.
