  • 1 teaspoon paprika
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon ground coriander
  • 1/4 teaspoon pepper
  • 1/4 cup flour
  • 2 teaspoons lemon juice
  • 2 teaspoons olive oil plus more as needed
  • Cooking spray

  • 6 pitas
  • 2 tablespoons olive oil
  • Salt and pepper
Tzatziki Sauce
  • 1/2 cup grated Persian cucumber or English cucumber, unpeeled
  • 1 lemon
  • 1/2 cup plain Greek yogurt I love Greek Gods, use non-dairy yogurt for vegan
  • 1 teaspoon minced garlic
  • 1-1/2 tablespoons olive oil
  • 1-1/2 teaspoons red wine vinegar

Instructions

  1. Drain and rinse the chickpeas thoroughly, then dry them very well using a paper towel or a salad spinner. Coarsely chop the red onion, garlic, parsley, cilantro, and green onions, and add them to a large food processor. Pulse for about 45 seconds until the ingredients are blended but not entirely pureed. Scrape down the sides of the food processor bowl. Add the dried chickpeas and pulse again until they are chopped but still retain some texture, not pureed. Scrape down the sides once more, then add all remaining falafel ingredients. Pulse a few more times until everything is well combined and forms a chunky mixture.
  2. Using a 1-1/2 tablespoon cookie scoop, compress the falafel mixture firmly, then gently form it into patties. Place these patties on a parchment-lined plate. If the falafel mixture feels too wet to work with, dust your hands or surface with a bit more flour, or refrigerate the mixture for about 20 minutes to firm up. Continue forming patties until all the mixture is used, yielding approximately 15 falafels. Cover the plate with plastic wrap or a kitchen towel and freeze the falafels for 20 minutes, or until you are ready to cook them. This step helps them hold their shape during air frying.
  3. **For the Tzatziki:** Grate an unpeeled Persian or English cucumber using the large holes of a grater.
