Ingredients

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1 (13-ounce) package Butterball Turkey Sausage
  • 3 tablespoons unsalted butter
  • 3 medium bell peppers
  • 1 small yellow onion diced
  • 1 teaspoon minced garlic
  • 2 teaspoons dried parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Eggs optional
  • Fresh parsley optional
  • Green onions optional

Instructions

  1. Start by scrubbing and thoroughly washing the potatoes. Dry them completely and poke holes all over using a fork. Place in the microwave for 5 minutes, flip them over, and microwave for another 3–5 minutes, or until fork-tender. Remove and allow to cool slightly.
  2. Meanwhile, prepare the sausage and vegetables. Slice the sausage into coins. Chop the bell peppers and onion into bite-sized pieces. Add the olive oil to a very large skillet or pan and heat over medium-high heat until shimmering and sizzling. Add in the coined sausage and cook for 4–5 minutes, stirring occasionally, until lightly browned and slightly crispy. Remove the sausage to a plate and set aside.
  3. Add the unsalted butter to the same pan, maintaining medium-high heat. Stir the butter until melted, then add the chopped bell peppers and onions. While the vegetables begin to cook, dice the pre-cooked potatoes into cubes, leaving the skins on if desired for extra texture and nutrients. Add the diced potatoes to the pan with the peppers and onions. Cook, stirring occasionally, until the vegetables are crisp-tender and the potatoes have developed a beautiful, crispy exterior, approximately 4–7 minutes. Then, stir in the minced garlic, dried parsley, Italian seasoning, paprika, and season generously with salt and pepper to taste.
  4. If you wish to include eggs, push the hash to create four small wells in the pan and crack an egg into each well. This should be done just before the vegetables are fully finished cooking to prevent over-browning. Fry the eggs until the whites are set and the yolks are cooked to your preference (runny, soft, or hard). Once cooked, immediately remove the hash from heat and serve.
  5. For an extra burst of freshness and color, top the hash with fresh chopped parsley or sliced green onions, if desired. Adjust any additional salt and pepper to your taste before diving in. Enjoy this incredibly flavorful and satisfying meal!
