Ingredients

For the Crispy Chickpeas:

  • 1 (15-ounce) can chickpeas (garbanzo beans); drained, rinsed, and thoroughly dried
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

For the Wraps:

  • 4 large tortillas (whole wheat recommended)
  • 1 cup hummus, divided
  • 2 small Persian/Salad cucumbers or 1 English cucumber, about 1 cup, thinly sliced
  • 1 sweet bell pepper (red, yellow, or orange), thinly sliced
  • 1 large carrot or 3/4 cup matchstick carrots
  • 1 small avocado, thinly sliced
  • 4 large handfuls mixed greens or baby spinach
  • Sriracha, to taste (optional but recommended, see Note 2)
  • Fresh parsley, chopped (optional)
  • 1 lemon, for juicing (optional)

Instructions

  1. Prepare Chickpeas: If using an oven instead of an air fryer, refer to Note 1 below. Drain and rinse the chickpeas thoroughly, then dry them very well using a salad spinner or by patting them with paper towels. Wet chickpeas will steam instead of crisp.
  2. Season and Cook Chickpeas: In a large bowl, toss the dried chickpeas with olive oil, paprika, dried oregano, dried basil, garlic powder, and salt and pepper to taste (we suggest about 1/2 teaspoon salt and 1/4 teaspoon pepper). Stir until all chickpeas are evenly coated.
  3. Air Fry Chickpeas: Place the seasoned chickpeas in a single, even layer in your air fryer basket. Cook for 11–14 minutes at 400°F (200°C), shaking the basket halfway through to ensure even crisping. Cook until crisp but not hard (we prefer them around 12 minutes).
  4. Prepare Vegetables: While chickpeas are cooking, prepare your vegetables. Cut off the ends of the cucumbers, then slice them in half lengthwise and cut into 1/4-inch thick strips. Thinly slice the bell pepper. Cut the carrot into matchsticks, or use pre-cut matchstick carrots. Thinly slice the avocado.
  5. Assemble Wraps: Lay out the tortillas. Spread 1/4 cup (60g) of hummus evenly over each tortilla. Top each with 1/4 of the crispy chickpeas (about 1/3 cup per tortilla), gently pressing them into the hummus to help them stick.
  6. Add Veggies and Finish: Evenly divide the prepared vegetables among the wraps: cucumber sticks, bell pepper slices, carrot slices, avocado slices, and a large handful of mixed greens. If desired, sprinkle with fresh parsley. Drizzle with fresh lemon juice and/or Sriracha (we love lots of Sriracha!), and add another pinch of salt and pepper.
  7. Roll and Serve: Roll each tortilla up tightly and enjoy immediately for the best flavor and texture!

  1. Oven Roasting Method for Chickpeas: Preheat your oven to 400°F (200°C). Generously grease a large baking sheet with cooking spray or a drizzle of olive oil.
