  • Add the prepared chicken to a resealable plastic bag. In a small bowl, combine all the remaining “Chicken” ingredients, including the freshly squeezed orange and lime juices. Add 1 tablespoon of olive oil and, once shimmering, add a handful of the sliced veggies, ensuring they cover the entire base of the pan in a single layer without overlapping. Allow them to cook undisturbed for about 45 seconds to develop a char. Toss quickly, spread them out again, and cook for another 45 seconds. Sprinkle with salt and pepper, stir once more, spread out, and let stand for an additional 30 seconds or until they are nicely charred and crisp-tender. Remove the cooked veggies, set them aside, and repeat this process until all the peppers and onions are perfectly cooked.
  • Add the remaining 1 tablespoon of olive oil to a large pan and set it to medium-high heat. Using tongs, carefully remove the chicken from the marinade bag, allowing any excess marinade to drip off. Place the chicken pieces flat in the pan in a single, even layer without overlapping. Let them sear and char for approximately 3–4 minutes before flipping to the other side and cooking for another 3–4 minutes.
