Instructions

  • Preheat oven to 400°F (200°C). Very generously spray a glass or ceramic (not metal) 9×13-inch pan with cooking spray. Cut butter into 6 equal pieces and set aside.
  • Add the uncooked basmati rice into the prepared pan along with the minced garlic, all the seasonings (garlic powder, onion powder, dried thyme, dried oregano, Italian seasoning), salt and pepper (adjust to preference—see note 4), and chicken stock. Stir with a wooden spoon until ingredients are incorporated, then spread in an even layer. Evenly top with the cut pieces of butter. Cover tightly with foil. Bake for 40 minutes. Then, remove the foil (save foil—just set aside for now) and bake for 15 more minutes, uncovered.
  • Remove from oven. Do not stir the rice. Top with the foil again and let stand at room temperature for 10 minutes. This resting period is very important to avoid mushy rice! Meanwhile, zest and juice the lemon to get approximately 1 teaspoon zest and 3–4 tablespoons juice; finely chop the parsley.
  • After 10 minutes of resting, gently mix everything together and lightly fluff the rice with a fork. Add the fresh lemon zest, lemon juice, and chopped parsley. Mix in gently. Taste and add additional salt/pepper if needed. Gently stir again and serve immediately! Check out note 3 for my favorite way to serve this rice.

Recipe Notes

Note 1: I tested this recipe with all kinds of rice, and the only one that worked consistently was basmati rice. Other grains of rice gave inconsistent results—ranging from very mushy to unevenly cooked (some hard grains/some mushy).

Note 2: The stock is very important to flavor—use a full-bodied (not low sodium) stock for the best results. I love Swanson’s® stock best.

Note 3: Serving suggestions: My favorite way to enjoy this lemon rice is with hot grilled chicken or lemon-pepper seasoned rotisserie chicken, crisp thinly sliced cucumbers, loads of this Tzatziki Sauce, and warmed pita bread to scoop everything up!

Note 4: Not all salts season the same (you’ll need more or less depending on the salt used). I use fine sea salt. You may want less salt if you are sensitive to salt or if your chicken stock is already heavily salted. Add less if concerned; you can always add more at the end after tasting.

Storage: Store any leftover lemon rice in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of water or extra stock to refresh its texture and moisture.
