Flip it over and microwave for another 5 minutes, or until it is very tender when pierced. Set the cooked sweet potato aside and allow it to cool completely.
- While the sweet potato cools, place the dark chocolate chips in a microwave-safe bowl. Heat in increments of 20 seconds, stirring well between each interval for about 15 seconds, until the chocolate is smooth and fully melted. Carefully add the melted chocolate to a large blender, using a spatula to scrape every bit of chocolate from the bowl. Then, add the coconut sugar, vanilla extract, and sea salt to the blender.
- Once the sweet potato is cool enough to handle, remove its skin and thoroughly mash the potato with a fork until very smooth. Measure out exactly 3/4 cup (180g) of the mashed sweet potato and add it to the blender along with the canned lite coconut milk.
- Secure the lid on the blender and blend on high speed for at least 1 minute, or until all ingredients are completely smooth and thoroughly incorporated into a uniform mixture. If the mixture feels warm after blending, transfer it to the refrigerator and chill for 20–30 minutes before proceeding.
- Using a spatula, scrape every bit of the mixture from the blender into your ice cream maker. Churn the mixture according to your manufacturer’s directions. (With my Cuisinart, it typically takes about 30 minutes to reach a soft-serve consistency.) Once churned, transfer the soft ice cream to an airtight container and smooth the top into an even layer. Place the container in the freezer to continue firming up for about 2–3 hours, or preferably overnight for the best texture. (I find it’s truly best the next day!)
